BLEAK ROE, WHITE FISH ROE AND TROUT ROE

Bleak roe; this delicate roe originates from the small löje which resides in sea of northern Sweden; a Nordic alternative to sturgeon caviar. White fish roe (close related fish family; Coregonus Clupeaformis) is a bit more large grained, but still very delicate. Trout roe is even greater. Served with slightly toasted filone bread, blinis, crème fraiche and fine chopped red onions.

FALLOW DEER FROM THE SWEDISH FORESTS

Saddle of fallow deer, served with baked parsnips, carrots, beetroots and potatoes, accompanied by a grilled aubergine topped with parmesan cheese and marsala sauce.
